Has the characteristic mineral taste, typical of the variety, at it’s very best. * Aging potential: Over 6 years. * Serving Suggestions: Fish and white meat with light sauces served at 10-11° C. * Location of vineyard: Santorini, Oia, Imerovigli (in the north part of the island). * Soil: Consists of fragments of black lava, volcanic ash and pumice. It is classified as sandy for purposes of its mechanical properties. Quite intense minerality already with the characteristic citrus notes. This is unequivocally a top quality grape variety. Sigalas 2002 Unoaked Santorini 18 Drink now Fresh and assertive from one of Santorini's smallest-ever, most concentrated vintages. Almost Saar-like. Sigalas 2001 Unoaked Santorini 17 Drink up Really deep nose, though not nutty like the Papaοoannou example above. A lemon oil character not unlike mature white Graves. The unoaked version seems to change, though not necessarily improve.
